To counteract the oversaturated gin industry, we set out to establish something different, something neverseen before – united by our love for travelling, we created BIRDS, a craft brand dedicated to unite the traveller lifestyle with a spirit that brings together German craftsmanship and exotic flavours from all continents.
HOW IS IT DIFFERENT FROM GIN?
While gin is made from fermented grain mash and flavoured with juniper, BIRDS is distilled from fruity German Riesling wine and flavored with a variety of different botanicals, explicitly not with juniper!
Our independent micro distillery is located between Berlin and Hamburg – surrounded by 450 hektars of apple trees. Here we distill our craft spirits in a copper pot still by Arnold Holstein in small batches of only 700 bottles. Our 7th generation winery is located at the famous Moselle in the south-west of Germany.

As passionate globetrotters and wine enthusiasts we had the vision to combine German wine production with characters from all over the world. Since then BIRDS stands both for modern wines from the homeland and also for unique craft spirits made from wine – inspired by adventures from around the world. Always with the aim to make every moment of gusto, a special experience with friends.

We owe the defining fizzy-fruity characteristic to our Spanish citrus fruit. Refreshing!
Our apples come from the local orchard, which surrounds the distillery. 450 hectare of pure natural! An homage to our lovely homeland.
The berrylike aroma embelishes the distillate with a light earthy-nutty character with a subtle sweetish composition.
An ingredient that does not only enhance red cabbage! Endemic to the south of the Sahara the clove provides the wine distillate with slightly spicy accents.
The medium-strength voatsiperifery pepper from Madagascar gives the brandy a warm, multifarious aroma and bestows that certain something!
Our Vietnamese star anise with its sweet, oriental scent is in perfect harmony with the fresh citrus flavors. Warm and vigorous!
The root of the subtropical liquorice is one of the 50 basic herbs in Chinese medicine. It enhances the distillate with a pleasant sweetness and intensifies the intricacy immensely.
The heating plant for body and soul. An extremely versatile ingredient, that gives our distillate a bitter comfortable base flavor.
Indigenous to the rainforests of Latin America the cocoa peel emits a heady chocolate aroma. A brilliant enjoyable contrast to our orange peel.
PINK PEPPER BERRIES
The feisty temptation from beautiful Brazil. Sweet! With a slightly bitter touch of fruit.
The Australian nutmeg tree is reminiscent of cinnamon and pepper and bestows a warm noble touch with a gentle hint of fresh herbs upon the brandy.
No mouth rinse in the distillate! The Australian eucalyptus leaves gives BIRDS a pleasant spicy-aromatical structure with a smooth taste of bitterness.
BIRDS occupies a spirit category of its very own and cannot be put away in any drawer. The production of BIRDS is globally unique. Though, if we had to choose a shelf in the store, it would be the one with Gin. Why? BIRDS obviously doesn’t taste like Gin as it is lacking the aroma of juniper, but can be prepared the same way. Like that, BIRDS is an outstanding Gin alternative.
No. Classical Brandys made from Wine (Brandy, Cognac) are maturing in wooden barrels after the distilling process for at least six months. Like that, the Brandy gets its aromas and the typical coloring (often supported with caramel). BIRDS never gets its aromas through the conventional barrel maturing. Instead, the flavoring is achieved through hand picked wines and the maceration of fruits, spices and/or herbs. Weissbrände may not be declared as “Weinbrand” according to EU guidelines.
BIRDS goes well as a refreshing aperitif or longdrink with e.g. a good ginger beer or with the Mediterranean Tonic Water of Fever-Tree. Also, high-class cocktail-creations, like the “BIRDS Sour” work exceptionally well. Find current recipes here: www.wearebirds.de/drinks
Like a culinary adventure: Fresh lemon- and fruit flavors, paired with warm, complex aromas of nutmeg, cacao, and clove. The spicy jungle pepper gives that certain something. An overview of all the botanicals used in BIRDS can be found above on this page.
There are two essential differences from the classical Gin: 1.) For BIRDS we are not using neutral alcohol (= 96% Ethanol) as a basis, but one-time distilled Wine from Riesling, which is produced by us and 2.) we use 0% juniper. BIRDS simply provides a pleasant change to everything that existed before. Nevertheless BIRDS can naturally be prepared like Gin with a good tonic.

Therefore we use a total of 12 hand-picked bio-botanicals from all 5 continents for BIRDS. The small aircraft functions as the binding element and also as an eyecatcher.
BIRDS is produced in the distillery (view photo) in lovely Mecklenburg-Vorpommern which is one car hour away from Hamburg, located right in between Berlin and Hamburg. Virtually in the middle of nowhere. In return the location is blessed with idyllic calmness and surrounded by 450 hectares of fruit trees. Here “the magic” happens in cooperation with the master-distiller Benny Klohr and his 350 litre copper pot from Arnold Holstein. Batch by batch we drive up to the distillery and put on the macerations in the wine-distillate.
Per bottle around five litres of Wine are being distilled und subsequently macerated for four days and four nights in 75% wine-distillate.
Per batch we fill exactly 700 hand-numbered bottles.
